EXPERIENCE REPORT

Located in Ortaköy, Beşiktaş, Banyan has been part of Istanbul’s dining scene for more than two decades. Established in 2003, the restaurant combines its exceptional Bosphorus setting with an individual Asian-Turkish culinary identity, bringing local ingredients and flavours together with Asian techniques, spices and methods of presentation.


The consistency of this culinary approach has also received external recognition, with Banyan included among the MICHELIN Guide’s Recommended restaurants in its 2023, 2024 and 2025 selections.


For this visit, we selected the restaurant’s signature “Two Chefs” tasting menu, which provided a concise yet comprehensive expression of Banyan’s culinary philosophy. From the progression of the courses to the accompanying beverages, the experience felt carefully structured and complete.


The menu took us on a compelling journey through Asian cuisine and its interaction with Turkish ingredients. Each course introduced a different flavour, technique or perspective, while the overall sequence retained a clear sense of continuity. Rather than feeling like a collection of individual plates, the menu unfolded as a coherent culinary narrative.


The beverage pairings were particularly accomplished. Each selection supported the character of its corresponding course and contributed naturally to the rhythm of the experience. The relationship between the dishes and drinks felt deliberate throughout, allowing both elements to express themselves without competing for attention.


At times, the experience resembled a visit to a thoughtfully curated exhibition: every course revealed a new detail, while the complete menu offered a broader understanding of the restaurant’s identity. This sense of discovery, combined with the remarkable Bosphorus view, elevated the meal beyond a conventional dinner.


Banyan delivered an assured fine-dining experience through the cohesion of its tasting menu, accomplished pairings and distinctive culinary perspective. It has earned a special place in our guide as one of the restaurants we are most eager to revisit, and we look forward to discovering how the same creativity, quality and consistency will be expressed on our next experience.
