EXPERIENCE REPORT
Located directly on the waterfront in Yeniköy, one of Istanbul’s most distinguished neighbourhoods, AZUR presents seafood through a contemporary and highly individual culinary perspective. The restaurant has developed distinctive recipes that move beyond conventional preparations, giving familiar ingredients a clear identity particular to its own kitchen.
This approach has earned AZUR continuous recognition in the MICHELIN Guide since its inaugural Istanbul selection in 2023. Following its inclusion in the 2023, 2024 and 2025 editions, the restaurant remains part of the current 2026 MICHELIN Guide Türkiye.
The individuality of the kitchen is visible across every detail that reaches the table. Even a dish as seemingly simple as a salad is treated as an opportunity to create something distinctive. Rather than relying on complexity for its own sake, the kitchen uses careful composition and confident flavour combinations to transform familiar ideas into recognisable signature plates.
Each dish appears to have a story and a clear reason for every element included in its composition. Presentation, texture and flavour are considered as parts of a single expression, allowing the chef’s perspective to remain evident throughout the menu. The care behind the cooking can be felt in the finished plates, giving the experience a sense of sincerity as well as technical refinement.
AZUR’s cocktail programme and extensive beverage selection provide considerable flexibility for pairing. Its individual cocktail creations make it possible to choose drinks that complement the character of different seafood preparations, while the breadth of the menu supports both alcoholic and non-alcoholic preferences.
The Bosphorus setting naturally contributes to the restaurant’s appeal, but the experience is not dependent on its location alone. The kitchen’s distinctive identity, carefully developed recipes and attention to detail ensure that the cuisine remains the central focus despite the remarkable waterfront surroundings.
AZUR represents a compelling choice for diners seeking modern seafood cuisine with a strong chef-driven identity. Its ability to place an individual signature on even the simplest preparation earned our appreciation, and we look forward to seeing the same creativity, culinary precision and consistency maintained on future visits.
